What Is  A Pork Rack

A pork rack is also known as a pork rib roast. This tender and flavorful cut comes from the loin area of the pig above the belly. The butcher may include some of the back fat, which helps baste the roast while cooking. The fat can be scored to expose more fat to the heat so that it renders during cooking and makes a nice crispy presentation.

What You Will Need To Make Pork Rack Roast Recipe

Start with the star of the show: Vande Rose Farms Duroc Rack of Pork. Then you will need garlic, rosemary, thyme, Dijon mustard, Panko bread crumbs and grape seed oil.

What Is Duroc Pork

Duroc Pork is prime pork that comes from American Heritage pork. It is known for its rich flavor, deep color, perfect marbling and juicy tenderness.

How Do You Cook A Pork Roast

To cook a pork rack perfectly in the oven, start the recipe by preheating the oven to 350 degrees.

To prepare the pork rack for roasting, set the pork on a baking sheet with a rack.

Pat the pork rack dry and rub with salt and pepper.

Heat a heavy pan and add grapeseed oil (2 tbsp). Sear the rack all over until browned. Set the rack aside to rest for at least 30 minutes.

Combine the Dijon mustard, rosemary, thyme and minced garlic

Rub the pork all over with the Dijon mustard mixture and then roll the rack of pork in the breadcrumb mixture

Place the pork on a roasting pan and transfer to the oven. Cook, uncovered, until the internal temperature reaches 145 degrees F, about 90 minutes.

When done, remove the pork from the pan and transfer it to a rack set over a baking sheet. 

Lightly cover with foil and let the pork rack  rest rest for at least 10 -15 minutes before carving

What To Serve With Roasted Pork

Pan Roasted Red Potatoes

Red Roasted Potatoes with Herbs

We like to serve pan roasted baby red potatoes with a pork rack roast. The potatoes are tossed with herbs and go beautifully with vegetables of the season. For the recipe you will need baby red potatoes, olive oil, fresh thyme and parsley.

Start by halving the baby red potatoes (1 pound) and cook them in boiling salted water for 10 minutes. Drain the red potatoes and let them steam dry in the pot with a lid to cover. Heat the olive oil (2 tbsp) in a heavy pan and fry the potatoes for 10 minutes over medium heat until they are golden brown. At the last minutes, toss in fresh thyme (1 tbsp) and fresh chopped parsley (1 tbsp). Season with salt and pepper to taste.

What Temperature Is A Pork Rack Done

A pork rack roast is done when it reaches an internal temperature of 145 degrees F. The roasted pork will continue to cook after it is removed from the oven, and the internal temperature will increase while it rests by 5 to 10 degrees. Cook the roast to 135 to 140 degrees and then remove it from the oven and cover with foil while it rests.

Should You Roast Pork On A Rack

You should always roast pork on a rack in a shallow pan. The rack elevates the roast from the bottom of the pan and allows the heated air to better circulate around the roast. In addition, because the roast is not sitting on the bottom of the pan, the rack helps prevent the bottom of the roast from burning.

How Many Minutes Per Pound Do You Cook A Bone In Pork Roast

When cooking a pork rack roast, set your oven temperature to 350 degrees F and allow 20 minutes of cooking time per pound. Bone in racks of pork can range in size from 3 pounds to 6 pounds. The rack of pork we are using today from  Vande Rose Farms is a 3 pound bone in rack of pork.

Should You Brown A Pork Roast Before Putting It In The Oven

Most chefs and culinarians say you should always brown a pork rack roast before putting it in the oven because browning the roast creates a maillard reaction. A maillard reaction gives the roast pork a much desired and enhanced exterior flavor. You can get the same flavor effect in a very hot oven, but risk the chances of drying out the roast.

Ingredients

  • 3 Pounds Pork Rack Vande Rose Farms
  • 2 tbsp Grapeseed oil
  • 2 tbsp Dijon mustard
  • 1 cup Panko bread crumbs fine
  • 1 tbsp chopped fresh rosemary
  • 1 tbsp chopped fresh thyme
  • 2 cloves minced garlic
  • 2 tsp Kosher salt
  • 1 tsp Black pepper

Instructions

  • Preheat the oven to 350 degrees F.
  • To prepare the pork rack for roasting, set the pork on a baking sheet with a rack.
  • Pat the pork rack dry and season with salt and pepper.
  • Heat a heavy pan and add grapeseed oil (2 tbsp). Sear the rack all over until browned. Set the rack aside to rest for at least 30 minutes.
  • Combine the Dijon mustard with the rosemary, thyme and garlic.
  • Rub the pork all over with the Dijon mustard, and then cover the rack of pork in the breadcrumb mixture. Pat the Panko crumbs to adhere.
  • Place the pork on a roasting pan and transfer to the oven. Cook, uncovered, until the internal temperature reaches 145 degrees F, about 60 minutes.
    PRO TIP: Cook the pork rack to 135 degrees and check the internal temperature with an instant read thermometer. The pork will rise in temperature to 145 degrees while resting.
  • When done, remove the pork from the pan and transfer it to a rack set over a baking sheet.
  • Lightly cover with foil and let the pork rack rest for at least 10-15 minutes before carving

Notes

The roast was about as perfect as it gets. Don’t worry if it is a little pink. That means it’s not dried out. The way I like to serve this dish is with a little apple jam on top. All I can say is that using a Heritage Duroc pork rack from Vande Rose Farms made all the difference in the world. Wow. This may change the way I cook pork forever. The roast was incredibly flavorful and juicy with hints of garlic, rosemary and thyme. The black pepper added a bit of balance, and the creamy roast potatoes paired beautifully with the richness of the pork.
