All Recipes @tellinglaurel gets high marks and 4 and a half stars for their version of bacon wrapped green beans. We particularly liked the addition of rosemary in the brown sugar, which added a really nice layer and hint of flavor. We think we can improve on the recipe by using fresh green beans instead of frozen. 

Susie Bullock from Hey Grill Hey has a great recipe with a barbecue twist that we really enjoyed. She uses a little soy sauce in the brown sugar baste and then smokes the green bean bundle before finishing on the grill. We love the idea of adding some smoke, but we want this recipe to be a little easier for the home cook and maybe even make ahead. We will try that recipe next summer after we break out the grill.

For this recipe, start with the star of the show: Vande Rose Farms Applewood Smoked Bacon. Then you will need green beans, carrots, garlic, brown sugar and butter. A pinch of Tajin Seasoning will finish this amazing side dish for the dinner table.

How To Make Bacon Wrapped Green Beans and Carrot Bundles

Start this recipe for bacon wrapped green beans and carrots by preheating your oven to 400 degrees. Place the bacon on a rack over a pan lined with parchment. Par baked the bacon for 5 to 6 minutes. Just enough to render a little of the bacon fat. Remove the bacon from the oven and set the strips aside on paper towels. Drain away the rendered bacon grease, but save the parchment paper sheet. 

Bring a pot of salted water to a boil and blanch the green beans for 2 to 3 minutes. After the beans have cooked , drain the beans and immediately submerge them in iced water. This will stop the cooking and also give the beans great color.

Bring a second pot of salted water to a boil and blanch the carrots for 2 to 3 minutes. After the carrots  have cooked, drain them and immediately submerge them in iced water. This will stop the cooking and also leave the carrots with great color.

Pat the beans and the carrots dry with paper towels.

Carrot Sticks

In a small bowl, mix the minced garlic and melted butter.

Wrap 4 green beans and 3 carrots sticks with a piece of bacon and secure with a toothpick.

Spoon the garlic and butter over the vegetable bundles. Sprinkle brown sugar over each bacon wrapped vegetable bundle, and then sprinkle Tajin seasoning on top.

Place the vegetable bundles back on the rack of a parchment lined sheet pan.

Bake at 400 degrees F for 20-25 minutes or until bacon is crispy.
