I’ve been on a mission lately to use more garlic in our recipes. However, raw garlic does not sit well with many people. The answer is often to roast whole heads of garlic so that they develop a milder toasted flavor that everyone can enjoy.

What You Will Need For Oven Roasted Garlic

ingredients you need for oven roasted garlic

For this easy recipe roasted garlic recipe you will need: Whole garlic, olive oil and salt. Tin foil and an oven are required. Several recipes feature cooking garlic cloves in muffin pans or cooking on the stove top. Well, those are fine too. However, this foil wrapped recipe is by far and away the easiest in my opinion.

I think an air fryer or instant pot will be my go-to method in the future but for today a conventional oven will do the trick.

How To Make Oven Roasted Garlic

peeled garlic head

First, peel away the outer layer of skin that is on the bulb of garlic. We want to do this gently so that the cloves remain attached to the core of the whole garlic bulb. Don’t worry too much about this step. Just remove what easily comes off and discard it.

Next preheat the oven to 400 degrees. We’ll be cooking our garlic hot and fast for about 30 minutes. I’m doing this a separate recipe so 30 minutes is fine.

Often if I am cooking dinner at a lower oven temperature, I might toss the foil pack of garlic into the oven and let it roast slowly alongside our main course. No worries.

cut the top off the garlic bulb

While your oven is preheating, slice the top off the garlic head, so that the interior of garlic cloves are exposed. That should be no more than ¼ of the way down the head of garlic.

Place the garlic bulb, face up with the exposed cloves showing onto a square of aluminum foil Drizzle olive oil (2 tsp) over the tops of the cloves. Then Kosher salt (pinch) on top.

Close the foil pack tightly around the garlic so no moisture or steam can escape.

Put the foil pack into the oven for 30 minutes.

cloves of roasted garlic from the oven

Remove the roasted garlic from the oven and carefully unseal the package. You can spoon out the interior of the roasted garlic or squeeze the entire bulb into a small bowl. Be careful it will be hot!

Can Roasted Garlic Cloves be Frozen

Freezing roasted garlic is the best way to preserve it. When we have made a batch of roasted garlic, and we have any leftovers, then we will squeeze out the heads into tiny cupcake liners and place them in the freezer.

Once frozen, we’ll peel away the paper and then place them into an airtight plastic container and then pop them back into the freezer. I use frozen garlic, instead of fresh garlic when I’m making tomato sauce for baked ziti.

What Does Roasted Garlic Taste Like

When you roast garlic, the cloves caramelize and take on a sweeter and mellow flavor without any of the sharp characteristics of raw garlic. If you cook the cloves to long, and they burn, then they will taste bitter. Some people say that roasted garlic reminds them of toasted caramel.
