If you don’t want to fire up the grill or the weather isn’t permitting you to barbecue outdoors, then you’re going to be amazed at how easy this Sweet Baby Ray’s barbecue chicken recipe is to make.
This chicken is a little sweet and a little spicy, and I think your family will love this for dinner. So today on Throwdown Kitchen we are going to show you how to make an easy barbecued chicken in the oven. Throw in a couple of classic sides like coleslaw and potato salad and bang, dinner is ready!
Marinade For Barbecue Chicken
The marinade for this barbecue chicken starts with whole milk. I usually don’t bother with buttermilk. If you like buttermilk then feel free to use that in this recipe. Mix into the milk a tablespoon of your favorite hot sauce, and you’ll have the perfect chicken marinade.
Start by picking out a nice 4 – 5 pound chicken and cutting the whole chicken into 10 parts. But you say wait! A chicken has only 8 parts, two breasts, two thighs, two wings and two legs. No, I didn’t cut the wings into two, however I did cut the chicken breast in half. It seems that the chicken breasts are getting larger each year, have you noticed?
If you don’t want to take the time to cut up a chicken, then you can buy the chicken already cut up. I think the extra step is worth it in flavor and in cost. Why pay to have a chicken cut up when it only takes a couple of minutes. Sharp knife. Five minutes. Done.
I usually purchase a two pack of 4 pound chickens and freeze one for a rotisserie style whole chicken and cut up the other one for barbecue chicken or fried chicken.
Milk by itself has an amazing effect on chicken and I think that is one of the secrets to many a chicken recipe. Be it fried chicken or grilled chicken, if you start with a milk bath your chicken will be juicy and tender. Give it a try!
How To Barbecue Chicken In The Oven
For this BBQ chicken in the oven recipe, you need chicken on the bone, milk, hot sauce, salt and pepper, grapeseed oil, chili powder and Sweet Baby Ray’s barbecue sauce. That’s it. Just 6 ingredients.
Start by seasoning the chicken pieces all over with salt and pepper. Set these aside in the fridge for at least 30 minutes. Then, in a large bowl, make a milk bath by combining whole milk (1 quart) with Sriracha sauce (1 tbsp). Put the chicken into the milk bath and marinate for at least 2 hours or overnight. You can use any chili sauce that you like. Tabasco would also be a good choice.
Preheat an oven to 400 degrees.
Remove the chicken from the marinade and pat dry with paper towels. Brush grapeseed oil (2 tbsp) onto a baking pan and lay the chicken out skin side up. Season the pieces all over with a light dusting of chili powder.
Leave the chicken parts skin side down onto the baking pan. Put the tray of chicken into the oven and roast them for 25 minutes.
Remove the chicken from the oven and lightly brush the chicken with Sweet Baby Ray’s barbecue sauce. Turn the poultry over and now brush the skin side of the chicken with more barbecue sauce. Put the pieces back in the oven for 10 minutes.
Remove the pan of chicken from the oven again, and brush the roasted pieces with another layer of sauce. Put the tray of BBQ back in the oven for 10 more minutes, and cook until the sauce is set and the chicken has reached an internal temperature of 165 degrees. To make sure you are hitting your safe temperatures we highly recommend using a digital instant read thermometer.
Barbecue Sauce
Feel free to use your favorite barbecue sauce for this oven baked chicken recipe. If I have the time, I maybe inclined to make a quick barbecue sauce to go with our dinner. But in this case, for an easy weeknight dinner for the family, we’ll use our go-to barbecue sauce, Sweet Baby Rays.
If you like to toy around with different flavor profiles, here is a quick pineapple barbecue sauce from our the people over at Beer, Barbecue, Books and Baking. This Pineapple BBQ Sauce would be amazing on our oven baked BBQ chicken.
I like Baby Rays because it is a great sauce by itself, but also can be adjusted to tastes. Adding a little vinegar and mustard makes it a Memphis style sauce.
