Great ingredients and some time in the oven.
Vande Rose Farms Baby Back Ribs
We talk about great ingredients being the key to many barbecue recipes. Start with an excellent Duroc heritage pork rib. For our tender fall off the bone baby back rib recipe we started with Vande Rose Farms Baby Back Ribs. If you are familiar with this independent pork producer you’ll already know that they have the Best Bacon In America.
Why Is Duroc Heritage Pork Better?
The meat from Heritage Duroc pigs has good fat thought the well marbled muscle and retains moisture very well during the cooking process. Because of this breeding, Duroc pork, that has a ruby red coloring, can be used for smoking, oven roasting or quick pan frying. Duroc Pork is also a fine breed for bacon.
What you’ll need for this baby back rib recipe
For a falling off the bone baby back rib recipe you’ll need the rack of pork ribs (2 pounds each), Grapeseed oil (2 tbsp) Kosher salt (2 tbsp), black pepper (2 tbsp).
Remove the ribs from the packaging and pat them dry with paper towels. Remove the membrane from the underside of the ribs, and then rub the ribs with the grapeseed oil (2 tbsp). Then season the rib racks all over with the salt (2 tbsp) and the black pepper (2 tbsp)
What is the best way to remove the membrane from baby back ribs?
First, pull up a corner of the membrane at the fat end of the ribs, using the tip of a knife to get started. Then grab the edge of the membrane with a paper towel and pull the membrane down and away from the rib.
However, when we ordered baby back ribs from Vande Rose Farms, the butcher had already removed the membrane for us. So, that was a nice, but unexpected, surprise!
Pro Tip: Removing the membrane from beneath the baby back ribs allows the seasonings to penetrate though the rack.
Quick Barbecue Sauce
Place the baby back ribs in a roasting pan, bone side down. Cover the pan with aluminum foil. Put the pan in the oven for 2 hours and 30 minutes. While the ribs are roasting, start to make your quick barbecue sauce.
For the quick barbecue sauce you’ll need ketchup (1 cup), Vinegar (½ cup) brown sugar (½ cup), honey (½ cup), chili powder (1 tsp) and smoked paprika (1 tsp), Kosher salt (1 tsp) and black pepper (1tsp)
Combine all the ingredients in a small saucepan and heat the sauce to a simmer so that all the flavors come together. Set the sauce aside.
Remove the ribs from the oven and carefully remove the foil from the pan.
Brush the tops and bottoms of the ribs with the barbecue sauce, cover the pan again with the foil, and put them back in the oven for 30 minutes.
Remove the ribs from the oven and discard the foil. Turn the oven broiler on. Spoon more barbecue sauce over the tops of the ribs and broil the racks for 5 minutes.
