Who knew that the best Thanksgiving Leftovers Sandwich would be the best part of our Thanksgiving weekend. The leftover’s sandwich is coming in a close second to the stuffing waffles with poached egg that we enjoyed for brunch, but the family votes have been tallied and the no surprise winner was the stuffed biscuit sandwich with turkey, stuffing, green beans, carrots bacon and jam.
We gave this recipe some loving care by cooking the bacon bundles in a skillet before warming the turkey slices in the bacon drippings and then frying up the stuffing to a toasty golden brown.
The cranberry sauce had all been devoured Thursday night, so we substituted some fresh raspberry preserves and then a swipe of mayo as the sandwich moistener.
The best Thanksgiving Leftovers Sandwich all rested between a toasted layered biscuit. Just the perfect sandwich vehicle in my view.
What To Do With Thanksgiving Leftovers

1 Cup leftover stuffing
4 Tbsp Mayonnaise
2 Tbsp Raspberry Preserves
8 Ounces Turkey Breast sliced thin
Kosher salt and freshly ground black pepper
4 Biscuits
½ Cup Green Beans
½ Cup Carrots
4 Slices Bacon
How To Make This Thanksgiving Sandwich Leftovers Recipe
In a large non-stick pan cook the slices of bacon, remove and set aside.
Take the leftover stuffing and shape the stuffing into 4 equal pancakes about the diameter of the biscuit. Griddle the stuffing cakes on each side until brown and crispy. Transfer these to a plate and keep warm.
In the same skillet, melt the 2 tablespoons of butter over medium-low heat. Add the sliced turkey breast, cooking the slices until lightly caramelized, about 2 minutes. Season with salt and pepper.
While the turkey is heating, slice the biscuits in half and toast.
Make the biscuit sandwiches by spread 1 tablespoons of mayonnaise on the bottom of 1 side of the toasted biscuit. Layer the sliced turkey over the 4 bottoms of the biscuits. Top the turkey with a crispy stuffing pancake.
On top of the stuffing, lay the green beans, carrots and bacon slices. Top the sandwich with a raspberry slathered biscuit.
You could put the sandwich in the oven for a few minutes or enjoy right away!
