Today on Throwdown Kitchen we show you how to make Steak and Eggs for breakfast. We’ going to change things up a little and cook the steak in a cast iron pan along with butter, rosemary and thyme. To complement our beef we’ll fry vine ripened tomatoes with a Panko crust.
Steak and free-range eggs with fried tomatoes in a cast iron pan is easy to make and absolutely delicious. If I had to pick a breakfast skillet breakfast for the two of us on a special occasion, this would be it.

What You Will Need For Breakfast Steak and Eggs
The star of this steak and eggs recipe are the free-range organic eggs. However, we’ll pick our favorite cut of organic grass fed beef for this steak and eggs recipe: New York Sirloin Steak. Add some really fresh extra large eggs, firm red vine ripened tomatoes, olive oil, butter, fresh herbs, flour and seasoned Panko bread crumbs. We’ll have a terrific breakfast in just under 30 minutes.

What Cut of Meat For Steak and Eggs
The best cut of meat for steak and eggs is grass fed organic beef that is marbled well. Marbling is an indicator of tenderness. The marbling in meat helps keep the steak juicy and moist while cooking. Ribeye is the best choice for steak and eggs, followed by sirloin, chuck and tenderloin. I prefer grass fed organic beef for this steak and eggs recipe. After all, we are making the best steak and eggs recipe ever!
What Goes with Steak and Eggs
Most steak and eggs platters are served with a side dish of potatoes. The potatoes may be hash browns, home-style potatoes, Lyonnais potatoes or even french fries. However, other menu items that go well with steak and eggs include: sauteed mushrooms, broiled tomatoes, grilled asparagus or sautéed spinach.
How To Season Steak and Eggs
The steak should be well seasoned with salt and black pepper. Adding fresh herbs and butter to the pan while cooking will enhance the flavor of the steak. Rosemary, thyme as well as fresh garlic are complimentary seasonings for steak and eggs.
How To Make The Best Steak and Eggs for Breakfast
We’re going to make this effortless today on Throwdown Kitchen. Oil the steak (8 ounces) with extra virgin olive oil (1 tbsp) and then season the steak with a nice amount of salt (1 tsp) and black pepper (1 tsp).
Crack farm fresh or organic free-range eggs (4) in a small bowl and set aside at room temperature.
Cast Iron Pans
Cast iron pans make steak taste amazing. The kind of flavor you cannot get under the broiler or in a non-stick fry pan. A charcoal grill would be my second choice for a great steak.
But, this is for breakfast and our goal is to have breakfast ready in under 30 minutes. Heat up a cast iron pan to high temp, then add olive oil (1 tbsp) and lay the steak into the pan. Listen for the sizzle! That amazing sound of sizzle means you’ve got the temperature of the pan hot enough.
Once you’ve put it in. don’t move it around for at least 3 minutes, then flip it over. Reduce the heat to medium high. The steak will already have a great crust developed, and now it’s going to finish for another 3 minutes.
Add fresh herbs Thyme (1 sprig), Rosemary (1 sprig) and garlic (1 clove) to the pan along with more olive oil (1 tbsp) and butter (1 tbsp). While the steak is grilling, baste the steak with the herb seasoned butter.
Remove the steak and set aside to rest and keep warm. We cooked the steak to rare, and it’s going to continue to cook for 10 minutes out of the pan and come up to a medium rare temperature. If you like your steak more well done, that fine. Cook another minute on each side for medium.

Free Range and Farm Fresh Eggs
Free Range and farm fresh eggs taste better. I didn’t realize that until I was on vacation and enjoyed farm fresh eggs that had been delivered to the hotel earlier that morning. The look of the sunny side eggs was the big giveaway. The yolks presented a deeper shade of yellow that I had never seen at my breakfast table. I now take far greater care when I am sourcing eggs for my household. At the very least I am looking for organic free-range chicken eggs.
If the eggs are free-range from a producer like Vital Farms, I know that the chickens have had a better diet than those in commercial egg laying facilities. And if the organic eggs are locally sourced I know they haven’t been on the shelf for months. Go with organic free-range eggs for an amazing steak and egg breakfast.
Maryland Pan Fried Tomatoes
The tomatoes don’t need much attention. Thickly slice the vine ripened tomatoes, at least 1 inch thick, dredge them in all-purpose flour and then into an egg wash. Coat them with Panko seasoned bread crumbs.
Reduce the heat on the cast iron pan to medium high heat and add olive oil (1 tbs) and cook the tomatoes on one side for 2 minutes and then flip them over and cook another 2 minutes.
Cook Your Fried Eggs Like A Pro
Of course if you want to cook your organic free-range fried eggs in the same cast iron pan, go right ahead. They may need extra attention to get them just the way you like them, so I prefer to use a non-stick skillet for perfect fried eggs every time.
Heat a non-stick fry pan to medium, drop softened butter (2 tablespoons) and then gently add your eggs (4) into the frying pan. Reduce the heat to medium low while the eggs cook through.
We like our eggs yolk side up and cooked so that the yolk is still runny but the whites are cooked through. We’ll place a lid on the eggs with water (1 tsp) and let the eggs cook for 3 minutes.
30 Minutes Later Let’s Eat!
Slice the sirloin beef steak against the grain of the steak. Plate the steak slices alongside the eggs and fried tomatoes. Garnish the dish with chopped chives or sliced green onions. Serve the steak and eggs immediately.

If you are feeling particularly adventurous this morning, pan fry bread slices in the cast iron pan using the fat and drippings that remains in the pan. But I think I will settle perhaps for buttered Texas toast.
