Blueberry Banana Bread Recipe

What we really like about this recipe is that it’s so simple and easy to make. Blueberries are such a welcome addition to banana bread. The addition of blueberries to a basic banana bread recipe add a little tartness and a little sweetness. Blueberries are also packed with antioxidants and vitamin C so not only are blueberries good in banana bread but also healthy.

With the addition of blueberries to our banana bread, we could cut down on the white sugar that is in a normal recipe.

Banana Blueberry Bread Recipe

For this recipe for blueberry banana bread you will need all-purpose flour, eggs, butter, sugar, bananas, blueberries, baking powder, baking soda, salt, cinnamon, nutmeg, and vanilla. 

Start by peeling and mashing the bananas (3 medium). The bananas should be over ripe and turning brown. It’s OK to leave a few lumps in the mashed bananas.

Next, in a mixing bowl, whisk together all-purpose flour (1 ½ cups), baking soda (1 tsp), baking powder (½ tsp), cinnamon (1tps), nutmeg (1 tsp) and salt (1 tsp). Set this aside. 

Now, in a separate mixing bowl, add the white sugar (¾ cup), vanilla (1 tsp), whole eggs (2 large) and melted butter (6 tbsp). Blend this together and then fold in the mashed banana and  blueberries (1 cup). 

Fold the wet and dry ingredients together and pour into a buttered and floured 9 x 5 loaf pan.

Let the blueberry banana bread loaf cool for 10 minutes before removing from the pan. Then, I like to spread my bread or muffins with some softened cream cheese and a drizzle of local honey. Enjoy!

Dry Ingredients

  • 1 1/2 cup Flour all purpose
  • 1 tsp Baking Soda
  • 1 tsp Salt
  • 1/2 tsp Cinnamon
  • 1/2 tsp Nutmeg
  • 3/4 cup Sugar

Wet Ingredients

  • 2 Eggs
  • 6 tbsp Butter melted
  • 1 tsp Vanilla

Produce

  • 3 Bananas very ripe
  • 1 cup Blueberries frozen

Blueberry Banana Bread Using Frozen Blueberries
The ugly truth about blueberries is that they are wonderful in season but not so inexpensive out of season. The answer is to use frozen blueberries for our bread. To use frozen blueberries, it is important to let them thaw and then rinse them 2 to 3 times under cold running water to remove as much blueberry juice for the outside of the berries.
I start that by placing 1 cup of frozen berries in a small strainer and the run cold water over them until the water runs clear. After that, I’ll pat the blueberries gently on paper towels until they seem dry.
The blueberries still have a tendency to run in the batter and turn the bread a slight tinge of purple. So if that really bothers you, then certainly use fresh blueberries, but for me, the taste is almost the same as fresh.
Blueberry Banana Bread French Toast
Rarely, and I do rarely mean, there are 2 or 3 leftover slices of blueberry banana bread. If I happen to spot such a thing in the morning, I am often temped to make blueberry banana bread French toast. Its easy-to-make blueberry banana bread French toast, all you need is 2 or 3 large eggs, a little of cream and the leftover slices.
Start by mixing the eggs (3 large), cream (1 tbsp) and a pinch of salt. Dip the leftover slices in the egg batter.
Heat a non-stick pan with butter (1 tbsp) and griddle the slices until nicely browned, about 2 minutes per side.
Serve the blueberry banana French toast with honey or whipped cream. Fantastic way to use leftover bananabread!
Blueberry Banana Bread or Muffins
This is a recipe for a banana bread loaf, but I often use muffin tins. That way, I can grab one on the go when I’m in a morning rush. The only change I make to the recipe is that I’ll bake the muffins for 30-35 minutes instead of an hour. When they come out of the oven, let them cool slightly for 10 minutes.
Blueberry Banana Bread with Self Rising Flour
I’m a big fan of self using flour and I use it for my breakfast quick biscuits. You can easily substitute self rising flour in this blueberry banana bread recipe for the all-purpose flour. Make sure you eliminate the baking powder and baking soda when you mix the dry ingredients. The loaf will still be delicious.
