I was the lucky recipient of a fantastic Birthday present in April. An Omaha Box filled with steaks, burgers, dogs and chicken came upon my doorstep, and it took until today to break out the burgers. Great burgers needed something special, so I began crafting a recipe for the belated birthday occasion.
It’s funny. Creating a sauce that tastes like A1 Steak Sauce is the holy grail of homemade copycat recipes. When I started working on this homemade A1 Steak Sauce recipe, I thought it was going to be easy. However, A-1 has a remarkable flavor and is quite unique.
It took me two weeks of trial and error to get to the point where I was confident that not only did we succeed in making it a great copycat of the original A1 Steak Sauce, but is it possible to say that it was an even better sauce? Can a homemade A1 Steak Sauce be better than the original and still remain a copycat? That is the question.
Homemade A1 Steak Sauce
For the homemade A1 Steak Sauce recipe you will need tomato paste, corn syrup, sugar, white vinegar, raisins, orange marmalade, Dijon mustard, molasses, salt, Chinese 5 spice, garlic powder, onion powder, and celery salt.
First, soak raisins (4 ounces) in water (1 cup) for 15 to 30 minutes.
Start the A1 copycat by cooking the tomato paste (6 ounces) over medium heat in a non-stick sauce pot until it begins to brown, experiencing the maillard reaction.
Add the raisins and the soaking liquid to the tomato paste and bring to a simmer.
Then, add the corn syrup (½ cup), vinegar (12 ounces) sugar (½ cup), molasses (2 tbsp), orange marmalade (2 tbsp), Dijon mustard (2 tbsp), Kosher salt (2 tsp), garlic powder (¼ tsp) onion powder (¼ tsp) Chinese 5 spice (¼ tsp), and celery salt (⅛ tsp). Bring the A-1 copycat sauce to a simmer and cover. Simmer the sauce for 1 hour, string occasionally.
Remove the lid and let the steak sauce reduce until thickened and coats the back of a spoon. Let the mixture cool and then blend. Put the finished steak sauce in the refrigerator and let sit overnight for best results.
Serve this A1 homemade steak sauce with steaks, burgers, chicken or pork.
How To Cook Omaha Steak Burgers
Season the Omaha steak burger patties with salt and pepper.
Heat a cast-iron griddle or large heavy skillet over medium-high heat until very hot, about 2 minutes, add canola oil (1 teaspoon) and butter (1 tsp).
Working in batches if needed, place burgers on griddle. Let the burger patties cook, without moving, until the outer edges of the burgers are brown, about 2-3 minutes. Then, flip patties and cook until medium-rare, about 2 more minutes.
What is the Tomato Paste Maillard Reaction?
The browning of the tomato paste adds color and a depth of flavor to the sauce. The sugars in the tomato paste will caramelize, but be careful not to burn the tomato paste, or it will turn bitter. By cooking the tomato paste we eliminate the raw tomato flavor and deliver on umami.
