We are headed back to Charm City this week in search of Noodle Kugel. Noodle Kugel with raisins is one of our favorite sweet desserts and rarely do I pass the Deli without snapping one up. Besides, if I went into the deli for some corned beef and came home without one I would immediately be sent right back out to get one. Lesson learned.

To that end, we decided to come up with a copycat version of authentic Kugels that we could make at home. Luckily after 20 years working with the kitchens of one of the top Baltimore country clubs, I had the secret recipe at hand.

Shared with me by Selma, for a family dinner, this is a sweet and delicious egg noodle casserole and is perfect for a side dish, breakfast or after dinner dessert.

How To Make Noodle Kugel

This is probably one of those recipes that you think is complicated because it’s sounds different. Kugel. What? What the heck is a Kugel?

Well, it turns out that this is a classic casserole made with eggs, sugar, cream, cheese and starch. For this Kugel recipe we use a package of wide egg noodles.

Wide Egg Noodles For Kugel

Start the noodle kugel recipe by preheating the oven and putting a large pot of water on the stove top. We are going to cook our yummy pudding for 6o minutes in a 350-degree oven.

Bring the water to a boil and cook the eggs noodles for about 5 minutes. We want our noodles to be underdone because they are going to cook for another hour in the oven.

When they are done they are going to be delightfully sweet, soft and creamy.

Raisins For Sweet Noodle Kugel

Fill a bowl with hot water and soak 1 cup of raisins for at least 30 minutes to hydrate and plump them. Soaking for much longer really won’t make much difference.

If you are in a hurry, you can bring a saucepan of water with the raisins to a boil. Turn off the heat and let sit for 10 minutes.

Want to try something different? Cranberries or dried blueberries would be excellent choices.

Cottage Cheese or Mascarpone For Kugel?

Cottage Cheese

Mix all the batter ingredients together until smooth. It is possible to use Mascarpone as a substitute for the cottage cheese. But, we have found Mascarpone to sometimes be a little gritty in this dish.

The cottage cheese batter will have a few small curds remaining, but those will melt creamily into the casserole as it bakes. I find that a hand blender works best for a smooth batter.

Put the cooked egg noodles in a lightly buttered or sprayed 13 x 9 dish and stir in the batter. Then stir in the drained raisins and put the casserole into the preheated oven and cook for 60 minutes.

It is best to let cool for 30 minutes before serving. This dish is also so amazing cold. I love my slice of kugel topped with vanilla ice cream while it’s still warm from the oven.

CLASSIC DELI NOODLE KUGEL

Noodle Kugel with raisins is a classic holiday recipe that is perfect as a side dish or stand alone sweet dessert. It sounds like a dessert but it is a classic side dish.

Ingredients

  • 12 ounces Egg Noodles wide
  • 1 cup Sugar
  • 6 large Eggs
  • 16 ounces Cottage Cheese
  • 16 ounces Sour Cream
  • 1/4 cup Butter melted
  • 1 teaspoon Vanilla
  • 1 cup Raisins

Instructions

  • Preheat the oven to 350 degrees
  • Soak Raisins (1 cup) in warm water until plump. About 30 minutes.
  • Using a hand mixer or food processor, blend the Sugar (1 cup), Eggs (6), Cottage Cheese (16 ounces), Sour Cream (16 ounces), Melted Butter (1/4 cup), and Vanilla(1 teaspoon) until smooth. Set aside.
  • Bring a large pot of water to a boil and add in the Egg Noodles (12 ounces). Cook for 5 minutes. Drain the noodles and rinse with cold water to stop the cooking.
  • Light spray or butter a 13 x 9 inch pan and pour the cooked noodles into the pan. Pour the batter over the noodles and stir until combined.
  • Drain the raisins and add 3/4 cup of raisins into the noodle mix and combine well. Top the noodle casserole with the remaining 1/4 cup of raisins.
  • Put the noodle kugel into the oven and cook for 60 minutes.
  • Let the kugel cool slightly before cutting and serving. This dish is also very good served cold.
    Serve with whipped cream or ice cream if desired. Enjoy!
