Equipment

  • Oven

Ingredients

  • 1 Head Garlic
  • 2 tsp Olive oil
  • pinch Kosher salt

Instructions

  • First, peel away the outer layer of skin that is on the bulb of garlic. We want to do this gently so that the cloves remain attached to the core of the whole garlic bulb. Don’t worry too much about this step. Just remove what easily comes off and discard it.
  • Next preheat the oven to 400 degrees. We’ll be cooking our garlic hot and fast for about 30 minutes. I’m doing this a separate recipe so 30 minutes is fine.
  • While your oven is preheating, slice the top off the garlic head, so that the interior of garlic cloves are exposed. That should be no more than ¼ of the way down the head of garlic.
  • Place the garlic bulb, face up with the exposed cloves showing onto a square of aluminum foil Drizzle olive oil (2 tsp) over the tops of the cloves. Then Kosher salt (pinch) on top.
  • Close the foil pack tightly around the garlic so no moisture or steam can escape.
  • Put the foil pack into the oven for 30 minutes.
  • Remove the roasted garlic from the oven and carefully unseal the package. You can spoon out the interior of the roasted garlic or squeeze the entire bulb into a small bowl. Be careful it will be hot!

Notes

Can Roasted Garlic Cloves be Frozen
Freezing roasted garlic is the best way to preserve it. When we have made a batch of roasted garlic, and we have any leftovers, then we will squeeze out the heads into tiny cupcake liners and place them in the freezer.
Once frozen, we’ll peel away the paper and then place them into an airtight plastic container and then pop them back into the freezer. I use frozen garlic, instead of fresh garlic when I’m making tomato sauce for baked ziti.
What Does Roasted Garlic Taste Like
When you roast garlic, the cloves caramelize and take on a sweeter and mellow flavor without any the sharp characteristics of raw garlic. If you cook the cloves to long, and they burn then they will taste bitter. Some people say that roasted garlic reminds them of toasted caramel.
Oven Roasted Garlic For Bread
A quick and easy appetizer is to make crostini from sliced french bread or rolls. Drizzle the crostini with olive oil and then spread warm roasted garlic onto the crostini. Finish with Feta cheese crumbles or julienne of sun-dried tomato.
Once you have mastered this easy recipe for oven roasted garlic, I believe that you will find many more ways and opportunities to use this recipe in your recipes.
