Gather The Fried Buffalo Chicken Sandwich Ingredients

For the fried buffalo chicken sandwich recipe, you’ll need boneless skinless chicken breasts, potato sandwich rolls, iceberg lettuce, ranch dressing, buffalo sauce, flour dredge, salt, pepper, seasoned salt, baking powder and canola oil.

Chicken Breast

Most boneless chicken breasts seem to be in the 8 to 9 ounce range these days. You’ll want to cut these down to manageable sizes. Cut the boneless chicken into 4 to 5 ounce pieces and flatten them to a half inch uniform thickness. This helps the chicken cook evenly and quickly without burning. Cook the chicken to 165 degrees internal, temperature. The best way to check is with an instant read thermometer. The chicken will only take 6 to 8 minutes at 375 degrees. So be ready to eat when they are done.

Potato Roll

Shake Shack uses Martins potato rolls for their sandwiches and the buffalo chicken sandwich is no exception. The rolls are light and pillowy, but hold up nicely under all the sauce and dressing. I think any heavy roll will do, so feel free to use a Kaiser or Brioche roll for this sandwich. But if you want to stay true to the copycat shake shack recipe for a Buffalo chicken sandwich, go with a potato roll.

Buffalo Sauce

buffalo chicken sauce

Buffalo sauce is one of the easiest and tastiest sauces to perfect. With only 2 ingredients, it can be made in no time at all. Use any hot sauce that you prefer as a base. A good choice is Frank’s Hot Sauce. Franks sauce is a milder hot sauce blend of cayenne pepper and vinegar. Salt and garlic round out the flavor profile. This pepper sauce Scovile rating is 450, which makes it a milder hot sauce than most and ideal for a buffalo chicken sandwich recipe. By adding melted butter, the heat is cut even more.

Ranch Dressing

Ranch dressing is a perfect substitute for blue cheese in any buffalo chicken recipe. Many people don’t care for blue cheese because of the funky taste, and ranch will provide the cooling creaminess that compliments the spicy Buffalo sauce. I find it easy to use the Hidden Valley ranch packets, when I’m making ranch dressing, after all, they invented it! Cut the milk back so that the sauce is thicker than a normal salad dressing. You can add a tablespoon of sour cream to take the creaminess and tang up a notch.

Fill a heavy pot with oil and heat to 375 degrees. Fry the chicken breasts 1 or 2 at a time for 8 to 10 minutes. The internal temperature of the fried chicken breasts should reach 165 degrees. You can use any oil that you like. I prefer to use a neutral flavored oil like canola oil.

After the chicken has been fired to a golden brown, dip the fried breast in the Buffalo sauce. Toss and coat the fried chicken breast evenly on both sides. This puts the “Buffalo” into the Buffalo chicken sandwich.

Final Tasting Notes & Review

This Throwdown Kitchen version of a Shake Shack Buffalo Chicken Sandwich was so good, no one could tell the difference. This was the most delicious fried chicken sandwich ever! A crispy chicken breast nested between 2 pillows of potato roll, that had been toasted to a golden brown, was perfection. The way the hot buffalo sauce played off the cool ranch dressing was inspired. The sandwich was creamy, hot and spicy, crispy and cool all at the same time. I think I missed having pickles on the sandwich, so next time a couple of dill pickles will go on the bottom.
