We combined the sweet and salty of the bacon jam with the creamy heat of a Sriracha mayo on a black angus burger and the results were amazing.
Bacon Jam Recipe
The recipe takes a little bit of prep work, but with the use of a slow cooker, we were able to create a bacon jam that had all the hallmarks of great caramelized onions without standing over a pot for an over and stirring.
We made the onion mixture a day ahead and the flavors got better with the overnight rest.
This is what you need to make the bacon jam:
½ Pound Bacon
2 Medium White Onions
¼ cup Beef Broth
¼ cup Apple Cider Vinegar
¼ Cup Brown Sugar
1 Tablespoon Minced Garlic
1 Teaspoon Sriracha Hot Sauce
Salt and Pepper
Cook the bacon until almost crispy. Remove the bacon and drain. Keep a little of the bacon fat in the pan and saute the onions. Add in the rest of the ingredients, stir, and transfer to a slow cooker. Set the cooker on high for 6 hours, cracking the lid after 4hours.
When the jam is finished cooking, stir in balsamic vinegar and salt and pepper.
Let the mix cool and then process until the ingredients are combined but still slightly chunky.
Refrigerate for up to 2 weeks
Tips For Great Bacon Jam
*** No slow cooker , no problem. Just cook in the pan for about an hour on medium heat. Keep stirring so that the mixture does not burn.
*** No food processor, no problem. Let the mixture cool, use as is or chop chop on a cutting board.
