A lot of people don’t seem to enjoy or even want to try a turkey burger. They think it can not compare to the beef. But, we don’t want to overwhelm the turkey burger by adding a lot of stuff and mystery ingredients so that the burger has some flavor. But, there is no mistake, turkey needs some help and our secret is butter. If fat means flavor then this buttered juicy bird is a butter bomb of flavor.

Butter Is The Secret To A Juicy Burger
The addition of butter will make our burger moist and juicy. It’s not going to taste like a beef burger. It will taste like a great turkey burger! When you are making turkey burgers, you want you butter to be ice-cold. Grate the frozen butter into very cold ground turkey and go ahead and mix with your hands. Do this step quickly so that the butter doesn’t begin to melt. We want our butter to melt and steam into the patties once they hit the grill.
One you’ve got everything mixed together, make big burgers and cook them slowly. Enough heat to caramelize and give the burger a crust but not too hot that the burger burns before the internal temperature hits 165. As soon as it’s 165 degrees, it is time for cheese and assembly.
Now the perfect burger in most worlds is going to have a burger sauce, lettuce, tomato and onion, so we are not changing this missive. Start by making a quick mustard aioli for the sauce. We were tempted to caramelize onion, but instead went with a quick grill of sliced white onion, with a little char, for an additional layer of flavor for our turkey burgers.
How To Make Juicy Turkey Burgers
Build the burgers by toasting Brioche buns. Brioche hamburger buns are perfect for this sandwich not only because they are sturdy enough to hold a half pound burger but because they are also buttery in nature as well.
Layer the burger starting with sauce on the buns, then add the fresh lettuce and tomatoes.
Top the tomato with a little pinch of Kosher salt and then a small dollop of our quick sauce.
Down goes the burger with melted cheddar. Top the burger with grilled onions and then the top Bun, which of course is slathered with some more of our Dijon mayonnaise.

Just because it’s a burger doesn’t mean you have to serve french fries. There are quite a few great side dishes for a burger and especially for a turkey burger since we are freelancing anyway. Try these as a great side.

This is by far the best Turkey Burger I have ever made. Juicy, buttery and delicious. The Brioche Bun is nicely grilled. The addition of the caramelized grilled onions add another layer of flavor. The mustard sauce adds a bit of tang alongside the fattiness of the cheddar cheese. This burger recipe is going to need 5 napkins!

Juicy Turkey Burger Recipe
Equipment
- Griddle or cast iron pan
Ingredients
For The Burgers
- 1 pound Ground turkey
- 1/2 teaspoon Paprika
- 1/2 teaspoon Kosher salt
- 1/2 teaspoon Black pepper
- 1/4 teaspoon Poultry seasoning
- 6 tablespoons Butter
For the Onions
- 1 large White onion
- 1 tablespoon Grapeseed oil
- 1 tablespoon Butter
For The Sauce
- 3 tablespoons Mayonnaise
- 1 tablespoon Dijon mustard
- 1/4 teaspoon Paprika
For The Toppings
- Lettuce
- Tomato
- Cheddar Cheese
Instructions
- Freeze the butter stick for 3 minutes. The combine then combine the ground turkey, seasonings and shredded butter. Mix well with your hands or a spoon to make sure the butter is distributed evenly. Divide the mix into 2 large patties. Place in the refrigerator while you grill the onions.
- Sauté the onions until nicely caramelized or well browned.
- Make the burger sauce by mixing the ingredients in a small bowl. Keep refrigerated until ready for use.
- Heat a pan to medium heat, about 325 degrees. Place the burgers in the pan and grill each side for 10 minutes or until an instant read thermometer reads 165 degrees.
- Assemble your burgers and enjoy.
