Instructions
Preheat the oven to 350 degrees
Soak Raisins (1 cup) in warm water until plump. About 30 minutes.
Using a hand mixer or food processor, blend the Sugar (1 cup), Eggs (6), Cottage Cheese (16 ounces), Sour Cream (16 ounces), Melted Butter (1/4 cup), and Vanilla(1 teaspoon) until smooth. Set aside.
Bring a large pot of water to a boil and add in the Egg Noodles (12 ounces). Cook for 5 minutes. Drain the noodles and rinse with cold water to stop the cooking.
Light spray or butter a 13 x 9 inch pan and pour the cooked noodles into the pan. Pour the batter over the noodles and stir until combined.
Drain the raisins and add 3/4 cup of raisins into the noodle mix and combine well. Top the noodle casserole with the remaining 1/4 cup of raisins.
Put the noodle kugel into the oven and cook for 60 minutes.
Let the kugel cool slightly before cutting and serving. This dish is also very good served cold.Serve with whipped cream or ice cream if desired. Enjoy!
